1 cup all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon
1 ½ cup rolled oats
½ cup melted butter OR coconut oil
¾ cup brown sugar
1 whole egg
1 egg yolk
2 teaspoons vanilla
¾ cup raisins, chocolate chips, nuts, or anything you want!
What to Do
Preheat oven to 350°
Prepare two baking sheets with parchment paper. If you only have one, you will bake your cookies in two batches.
Mix together all dry ingredients in a medium sized bowl: flour, baking powder, baking soda, salt, cinnamon, oats.
Whisk together all wet ingredients in a large bowl: butter OR coconut oil, brown sugar, whole egg, egg yolk, vanilla.
Pour dry ingredients into wet ingredients and mix together well.
Add optional ingredients to the batter.
Using a tablespoon, scoop cookie dough onto prepared cookie sheet(s).
Bake for 9-11 minutes.
Remove from oven and let cool. (Place second baking tray in the oven for 7-8 minutes. If you’re only using one tray, remove cookies from baking sheet to let cool and repeat steps 7-8.)
